Some of my tantalizingly sinful yet totally healthful creations and other yums found around the web... Enjoy!

I LOVE kale. I try not to kill it completely while sauteing or blanching it to keep as much nutrients as possible. chopped kale (about 2 cups), chopped onions (about 1/4-1/2 cup), sliced mushrooms (1/2 cup), sliced zucchini squash (half a squash), slivered almonds (1/4 cup-1/2 cup), crumbled ginger/mango cheese. Saute onions first then added other veggies, kale last just enough to soften it. Top with almonds and cheese. Saute in coconut oil or, like I did, leftover grease from bacon!

Nothing like homemade guacamole! 1 ripe avocado, 1 red tomato, chopped onion, juices of one lime and one lemon, chopped parsley or cilantro, Tony Sachere's Creole Seasoning. Chop and mix my friends! To taste-- and serve with your favorite veggies, kale chips, or whole grain crackers.
